We shared our last breakfast together, before Amanda left for the States.  A repeat of Julie’s tasty Spirulina Smoothie (see July 1st for recipe) and Lemon Poppyseed Oatmeal with Fresh Blueberries.

Lemon Poppyseed Oatmeal with Fresh Bluberries

1 1/2 cups oatmeal

3 cups water

1/2 lemon, zested

2 tablespoons poppy seeds

1/2 teaspoon honey

1 pint fresh blueberries

Directions

1.  In a medium saucepan, combine all ingredients except the blueberries.  Stir until thick and creamy, and the oats are cooked through (usually about 5 minutes).

2.  Top with fresh blueberries, and enjoy!
