For breakfast, I made a variation on pancakes (whole wheat flour and soy milk) with warm maple blueberry sauce.  The color is absolutely gorgeous!  Enjoy!

 

Warm maple blueberry sauce

1 cup frozen blueberries

1 tablespoon maple syrup

zest of 1 lemon

2 teaspoons whole wheat flour

Directions

1.  Combine all ingredients in a small saucepan.  Heat until thick and syrupy.  Pour over pancakes!
