Coconut Rice Porridge with Orange Date Compote
For the Rice Porridge:
1/2 cup arborio rice
1/2 cup coconut milk
1 1/2 cups water
1/4 teaspoon cinnamon
1/2 tablespoon maple syrup
1/4 teaspoon vanilla extract
For the Orange Date Compote:
1/4 cup dates, chopped
1/4 cup orange juice
1. For the rice porridge: Place the rice in a small saucepan over medium low heat. Add the coconut milk and water, 1/3 of a cup at a time, stirring constantly. Add cinnamon. Cook 15-20 minutes, until tender. Turn the heat off, and add the maple syrup, vanilla and salt.
2. For the date compote: While the rice porridge is cooking, combine dates and orange juice over low heat in a small saucepan. Heat until the dates begin to break down into the orange juice.
3. To assemble: Pour the rice porridge into a bowl. Dollop the date compote on top. Enjoy!
