Coriander Carrot Soup

Even in the heat, I am into hot soup.  I love when tasty concoctions come together with the stuff you have lurking in the kitchen.  Sometimes limitations enable enormous creativity.  Happy eating! – Amanda

Coriander Carrot Soup

1 teaspoon coconut oil

1 small onion, chopped

1/2 teaspoon coriander, ground

1/2 teaspoon turmeric, ground

pinch cayenne pepper

4 carrots, chopped

2 cups water or stock

1 lime, juiced

2 tablespoons orange juice OR 1 tablespoon honey (optional)

Cilantro (garnish)

Directions

1.  Sautee onion and spices in coconut oil.  Add carrots and sautee until soft.

2.  Add water or stock, and boil until vegetables will blend easily.

3.  In a blender, puree the carrot and onion mixture until smooth.  Add lime juice, and orange juice or honey if using.

4.  Garnish with cilantro.
