Pea, Mint and Scallion Soup

I’m on a chilled green soup kick!  This is a variation on the fava bean soup I did earlier this week.  It tastes like spring.  Yummy!  – Amanda

Pea, Mint and Scallion Soup

2 cups frozen peas

1 1/2 cups water

1/4 cup fresh mint

1/4 cup fresh scallions, plus more for garnish

1 clove garlic, minced

1 lemon, juiced

salt to taste

1 tablespoon olive oil

Directions

1.  Puree all ingredients in a high speed blender until silky smooth.

2. Serve chilled with additional scallions for garnish.
