Roasted Almond Butter

My deathrow meal might be a jar of almond butter and a spoon.  I can’t get enough of this stuff.  Last week I made it with raw almonds and a bit of coconut oil.  This week, I decided to roast them.  Roasting brings out their nutty depth, and helps them blend up even faster.  Delish! -Amanda

Roasted Almond Butter

3 1/2 cups almonds

Directions

1.  Roast almonds at 350 Fahrenheit for about 15 minutes, or until they perfume the kitchen.

2.  If you prefer crunchy almond butter, set aside about 1/2 cup of almonds and give them a rough chop.  In a food processor, blend until smooth.   It will take 10- 15 minutes, and you’ll need to scrape down the sides a few times.  If making crunchy style, fold in the roughly chopped almonds.
