Bruschetta

What to do with leftover bread?  Bruschetta!  Technically bruschetta refers just to the toasted bread, and not the tomato topping usually associated with it.  So feel free to play around. -Amanda

Bruschetta

6 slices crusty bread

2 large tomatoes, chopped

1/4 cup balsamic vinegar

2 tablespoons basil, chopped

salt and pepper

 

Directions

1.  Toast the bread at 350 Fahrenheit for 5-6 minutes.

2.  On the stovetop, reduce balsamic until thick and syruppy over medium low heat.  This will most likely take 3-5 minutes.

3.  Combine tomatoes, basil, balsamic reduction and spices in a bowl.

4.  Spoon tomato mixture over crusty bread.
