White Corn Bisque

I’m no raw food activist, but I have been pleasantly surprised by many raw food ideas.  This chilled bisque is raw, but not by design.  It’s simply the best way to highlight fresh, summer corn at it’s sweet peak perfection.  The bisque is velvetty and fresh, rich and light.  I put some additional corn salsa on top for decoration, but it would be perfect served on it’s own. -Amanda

White Corn Bisque

1/2 cup cashews, soaked

2 ears fresh corn, kernals removed

1- 2 1/2 cups water

1/2 lemon, juiced

pinch cayenne

teaspoon honey, or other sweetener

salt and pepper



1.  In a high speed blender, puree all ingredients  until smooth, starting with 1 cup of water.  Add water as needed until desired consistency is reached.
