Chocolate Pudding

My Dad has a deep rooted belief that he doesn’t like tofu.  I decided it was time to prove him wrong.  He said this pudding was the best he’s ever had- and this man knows his chocolate pudding.  In fact, we devoured it before I had a chance to take  a pretty picture.  When I revealed the secret ingredient, his face dropped, but he was definitely pleasantly surprised.  I recommend this if you want to share the joys of tofu with friends- just make sure you let them fall in love first so they have a chance to shatter their preconceptions. -Amanda

Chocolate Pudding

3/4 cup chocolate chips, vegan

1 pound silken tofu, room temperature

1/2 cup powdered sugar

3 tablespoons cocoa powder

1 tablespoon vanilla extract



1.  Melt the chocolate chips in a double boiler, stirring often.  Set aside and let cool slightly.

2.  Transfer the melted chocolate to a food processor.  Combine with remaining ingredients until smooth.

3.  Pour into container and let chill at least 1 hour.

4.  Serve to friends who don’t think they like tofu.
