Kale and Coconut Smoothie

Kale and coconut are more than the sum of their (delicious) parts for me.  With the addition of honeydew, ripe banana and a dash of vanilla, this smoothie tastes like a vanilla creamsicle.  -If you can get your hands on some vanilla powder, it will make this smoothie all the more special. -Amanda

Kale and Coconut Smoothie

Serves 2

1 cup kale leaves, packed

1/4 cup full fat coconut milk

1 banana, fresh or frozen

2 cups honeydew

pinch of salt

1 teaspoon vanilla or 1/2 teaspoon vanilla powder




1.  Combine all ingredients in a blender until smooth.  Start with 1 cup of water, and add more until you reach the consistency you like.  Kale leaves are sturdy, so they might take a little while to break down if you are using a machine that doesn’t have the strength of a motor boat.  Be patient and you’ll be rewarded.
