Black Bean Salad

Black beans and cumin remind me of my grandmother’s soup.  This salad is a little more refreshing on a hot summer day.  It’s great on its own, or wrapped in a homemade corn tortilla with a little guacamole (recipe soon to come). -Amanda

Black Bean Salad

Serves 2-4

1 1/2 cups black beans

1/2 cup corn

1/4 cup each red onion and red bell pepper, finely chopped

2-4 tablespoons cilantro, torn

1 lime, juiced

pinch of cumin

pinch of salt

2 teaspoons avocado oil



1.  Dissolve the cumin in the lime juice.  Whisk in the oil

2.  Toss all ingredients with the dressing and serve!
