Watermelon Gazpacho

Here is another super yummy chilled soup.  Adding watermelon adds a surprise twist to the traditional gazpacho.  The melon is sweet and aromatic, and the tomatoes are great this time of year.  Bon Appetit! -Amanda

Watermelon Gazpacho

Serves 2

2 cups watermelon, cubed

3 plum tomatoes, chopped

1/2 cucumber, peeled and chopped

1-2 large limes, juiced

1/4 red onion, chopped

1/4 cup sundried tomato, soaked and chopped

1/2 cup water

1 teaspoon extra virgin olive oil

salt and pepper

Basil, or other herb for garnish

Directions

1.  In a blender, puree all ingredients until smooth.

2.  Chill in the fridge at least 1 hour.

3.  Garnish with herbs and serve.
