Chocolate Chia Pudding

Chia seeds have been popping up all over the place.  I’ve even seen them in Norway!  They are marketed as a “superfood” but I think that’s just shiny wrapping.  I firmly believe that there aren’t good foods and bad foods.  I think the superfood label is just that- a label intended for marketing purposes.  So, I wouldn’t recommend this as a health food.  But I do recommend it as a fun dessert with a unique texture.  -Amanda

Chocolate Chia Pudding

1/4 cup cashews, soaked

1 cup water

1 heaping tablespoon cacao powder

1/2 tablespoon maple syrup

pinch of salt

1/4 cup chia seeds

optional flavorings:  cinnamon, vanilla extract, lucuma powder, etc.

 

Directions

1.  In a blender, puree cashews, water, cacao, maple syrup, salt and any other desired flavorings.

2.  Pour over the chia seeds.

3.  Let set at least 1 hour.  It will firm up and have a texture reminiscent of tapioca.
