Lemon Olive Oil Cake

It may sound strange to bake with olive oil, but it won’t taste like salad dressing.  Olive oil provides moistness while complimenting and elevating the aromatic lemony goodness.  Here is a light, citrusy bundt cake, thanks again to Chloe Coscarelli! -Amanda

Lemon Olive Oil Cake

Serves 4

1/2 cup flour

1/4 teaspoon baking powder

1/4 teaspoon baking soda

pinch salt

2 tablespoons olive oil

3 tablespoons maple syrup

3 tablespoons water

1/2 lemon, juice and zest

1/4 teaspoon lemon extract


1.  Preheat oven to 350 Fahrenheit.  Grease a baby bundt pan, or other cake pan.

2.  Mix dry ingredients.

3.  Mix wet ingredients.

4.  Add wet ingredients to the dry.  Mix until just combined.

5.  Pour batter into the pan.  Bake approximately 20 minutes, or until the edges pull away from the sides and an inserted toothpick comes out clean.

6.  Cool completely and unmold.

7.  Serve and garnish with powdered sugar, strawberries, peaches, or whatever floats your boat!
