Fig and Rose Oatmeal

It feels like fall in Boston!  This is the perfect warm breakfast.  It feels elegant, but is quick to throw together. -Amanda

 

Fig and Rose Oatmeal

1/2 cup rolled oats

1 cup lite coconut milk

2 teaspoons dried rose petals, divided

1/4 teaspoon ground cardamom

pinch salt

1 teaspoon honey or other sweetener

2 fresh figs, sliced

 

Directions

1.  Simmer oats in coconut milk with 1 teaspoon rose petals, cardamom and salt about 5 minutes, or until oats have absorbed most of the liquid.

2.  Top with figs, sweetener, and additional rose petals for garnish.
