1/2 cup rolled oats
3/4 cup water or non-dairy milk
1/4 teaspoon cinnamon
1/4 teaspoon cardamom
1/2 cup mashed pumpkin
2 teaspoons maple syrup divided
chopped nuts, optional
1. Bring oats, water and spices to a simmer. When it becomes thick (around 3-4 minutes), add the pumpkin and heat through.
2. Add 1 teaspoon maple syrup off the heat.
3. Pour into a bowl. Top with nuts and drizzle with additional maple syrup.
