Peanut Butter Cookies

When life gives you subpar peanut butter, make peanut butter cookies!  My roommate and I both favor natural peanut butter- just peanuts and salt ground up into oily, gritty, smoky, savory yumminess.  She accidentally picked up a peanut butter with oil and sugar whipped in for a smooth texture.  Perfect cookie making opportunity!  Also, baking is optional with vegan cookies.  Thanks to Chocolate Covered Katie’s Peanut Butter Secrets for the inspiration.  -Amanda

Peanut Butter Cookies

Yields 28 cookies

1/4 cup + 2 tablespoons all purpose flour

1/2 cup vegan cane sugar

1/4 cup brown sugar

1 1/2 teaspoons baking soda

pinch salt

1 cup peanut butter

1/4 cup applesauce

Optional add-ins:  chocolate chips, chopped chocolate peanut candies, honey roasted peanuts


1.  Mix all dry ingredients.

2.  Combine with wet ingredients.

3.  Roll each tablespoon of dough in a ball.

4.  Let the dough chill.

5.  Preheat oven to 350 Fahrenheit.

6.  Bake 8-10 minutes.

7.  Let cool 5 minutes.

8.  Share with friends!
