Spiced Sweet Potato Pan Pizza

Frankly, this was just one of those strange concoctions that emerges from the dual motives of resourcefulness and hunger.  I have a major sweet potato habit, and had a few leftover baked ones sitting around.  I ended up making this spicy mashed sweet potato dip, smearing it on top of a pan fried flat bread and topping the whole thing off with greens.  Genius or madness?  Not sure!  But I was satisfied.  Either way, I would totally recommend making the sweet potato dip, and smearing it on crackers, bread, or crudite. Spiced Sweet Potato Pan Pizza

Serves 1-2

1/4 cup whole wheat flour

1/4 cup chickpea flour

1/2 cup water

salt and pepper to taste

1 teaspoon olive oil

1/3- 1/2 cup spiced sweet potato dip (see recipe below)

mixed greens, for serving



1.  Combine whole wheat flour, chickpea flour, water, salt and pepper and let rest for as long as you have patience.

2.  Heat the oil in a skillet.  Pour in the batter.  Flip when the edges have dried and little bubbles have formed.

3.  Remove flatbread from the pan.

4.  Top with spiced sweet potato dip.

5.  Top with greens.

6.  Drizzle with extra virgin olive oil, if desired.  Season with salt and pepper to taste.


Spiced Sweet Potato Dip

Yields 1 cup


1 large sweet potato, baked, peeled and mashed

1 clove garlic, minced

1/2 lemon, juiced

1/2 teaspoon each cinnamon, cumin, paprika and mint

salt and pepper to taste

2 tablespoons tahini



1.  Stir to combine.

2.  That’s it!  Dig in!
