Quick Wild Blueberry Soft Serve

Despite the imposing winter, I decided I wanted ice cream today.  We didn’t have any in the house, so I improvised what turned out to be a gloriously purple, delicious afternoon  treat.  Enjoy! -Amanda

Quick Wild Blueberry Soft Serve

1 cup wild blueberries, frozen

1/2 cup soymilk, or other non-dairy milk

1 teaspoon vanilla

1/2 lemon, juiced

1/2 tablespoon honey, agave or maple syrup

pinch sea salt

Directions

1. Blend all ingredients until smooth and creamy.  Yum!
