Citrus Glazed Carrots

I have a serious fondness for cooked carrots.  There is a nursery school comfort about them that I just adore.  These carrots have just a hint of citrus flavor.  If you want more of a punch, I would add more lime juice.  You might also consider adding a bit more zest if you’re really into the citrus flavors.  Enjoy! -Amanda

Citrus Glazed Carrots

Serves 8

6 large carrots, sliced on a diagonal

2 tablespoons olive oil

juice and zest of 1 orange, 1 lemon, and 1 lime

1 tablespoon honey, or other sweetener

salt and pepper, to taste

Directions

1.  In a searing hot pan, add oil and carrots.  Cook until the carrots have started to caramelize on the outside.

2.  Deglaze the carrots with the citrus juice.  Let the liquid evaporate.

3.  Add the honey, salt and pepper and toss until the carrots are evenly coated in the sticky sweetness.

4.  Serve immediately.
