I’ve noticed that when you say vegan, most people understand you to mean healthy. Not healthy in the empowering sense, but healthy as in the punitive Protestant ethic definition. However, there are many delicious foods that are vegan by default, if not by design. Hummus is one of those (healthy) foods that most people love and don’t associate with veganism. While I was curled up on the couch watching the BBC Pride and Prejudice this weekend (so good!), I wanted a savory snack. Hummus is wonderful, but I wanted something with more texture. Think of this as a deconstructed hummus- a textured, savory, salty, yummy spread that is incredibly good on toast. Happy healthy eating! -Amanda
Mashed Chickpea Toast
Yields: 6 toasts
6 slices bread, toasted
1 tablespoon extra virgin olive oil, plus extra for drizzling
1 small onion, diced
1 teaspoon oregano
1/2 teaspoon red chile flakes
2 cups cooked chickpeas
1 tablespoon tahini
juice of 1 lemon
1 garlic clove, minced
salt and pepper, to taste
1. Sautee the onion in the oil with the oregano and chile flakes until they begin to caramelize.
2. Transfer the onions to a food processor. Add remaining ingredients and pulse until you reach a desired texture.
3. Spoon the chickpea mash onto the toast.
4. Drizzle with extra virgin olive oil, and an extra dusting of chile flakes.
