Falafel Burgers with Tahini Sauce

I am totally on a veggie burger kick.  These are a modification of Chloe Coscarelli’s Falafel Sliders.  The tahini sauce is delicious (clearly I overdid it on my burger…) and leftovers make a great salad dressing.  Warning:  these are messy.  And so worth it! -Amanda

Falafel Burgers with Tahini Sauce

Serves 6

For the burgers:

6 hamburger buns

1 can chickpeas

1/2 red onion, finely chopped

1 clove garlic

1 teaspoon ground cumin

1 teaspoon ground coriander

1/4 cup sundried tomatoes, soaked to reconstitute and drained

1 teaspoon salt

1/4 teaspoon black pepper

3/4 cup chickpea flour

2 tablespoons olive oil

Tahini Sauce:

1/2 cup tahini

1/2 cup water

juice of 1 lemon

2 cloves garlic, minced

1 teaspoon salt

1/4 teaspoon black pepper

For garnish:

1 avocado, thinly sliced

2 roma tomatoes, thinly sliced

pinch cayenne

salt and pepper

Directions

1.  To make the burgers, pulse all ingredients except the olive oil in a food processor until just combined.  Shape the burgers into 6 patties that will fit your bun.  Saute the patties in olive oil over medium heat.  When the burgers are dark and golden (about 4 minutes), flip and cook on the other side.

2.  To make the tahini sauce:  combine all ingredients by hand or in a blender.  Set aside.

3.  To assemble the burger:  On one side of the bun, mash a few thin slices of avocado.  Sprinkle with cayenne, salt and pepper.  Lay the tomato on top.  On the other side of your bun, layer on the tahini sauce.  Top with the falafel burger.  Layer together and dig in!
