Peanut Butter Sweet Potato Hummus
1 1 lb. sweet potato, roasted and peeled
2 tablespoons natural peanut butter
1 can chickpeas, drained and rinsed
1 large clove garlic, minced
1 1/2 lemons, juiced
salt and pepper, to taste
1. In a food processor, pulse all ingredients until desired smoothness is reached.
2. Serve with fresh vegetables and bread.
