On sweltering days like today, I’d rather drink something cold than eat something hot off the barbecue. This is technically a smoothie but has the thin, goes-down-easy quality of juice. So it’s a juicie? Whatever it is, it’s a delicious way to cool off. Happy Independence Day! -Amanda
Cucumber Avocado Juicie
1 large cucumber, peeled and seeded
1-2 tablespoons honey
1 lemon, juiced
pinch of salt
3-4 cups water
1. Combine all ingredients. Blend until totally smooth. Chill and serve.
