Meyer Lemon Poppyseed Muffins

Confession:  I made these last week.  And they looked like slimy aliens.  I forgot to add baking soda, so they baked up as oddly blue, hockey pucks.  This week was much more successful: fluffy, tender, scented like a lemon grove.  Enjoy! -Amanda

Lemon Poppyseed Muffins

Yields: 18 muffins

2 2/3 cup flour

2/3 cup granulated sugar

1/4 cup powdered sugar

2 teaspoons baking soda

1 teaspoon salt

1/4 cup apple cider vinegar

1/4 cup canola oil

1 cup water

zest of 1 meyer lemon

2 tablespoons poppyseeds

 

Directions

1.  Preheat oven to 350 degrees Fahrenheit.

2.  Mix the flour, sugar, baking soda and salt.

3.  Mix the remaining ingredients.

4. Combine the wet ingredients with the dry ingredients.

5. Fill muffin tins 2/3 full.  Bake for 20-25 minutes, or until golden.

6.  Let cool, and enjoy!
