Spiced Pecans

These are inspired by Nigella Lawson’s adaptation of the Union Square Cafe bar nuts.  They are at their most addictive when warm, right from the pan.  -Amanda


Spiced Pecans

Adapted from:  Union Square’s Cafe Bar Nuts


12 ounces raw pecans

1 1/2 tablespoons olive oil

2 teaspoons brown sugar

pinch cayenne pepper

1/2 tablespoon chopped rosemary

salt and pepper.



1.  Roast pecans at 350 Fahrenheit for about 10 minutes, or until golden and fragrant.

2.  In the meantime, heat the olive oil with the sugar and spices.

3.  Remove nuts from the oven, and toss in the spiced oil, over a low flame.

4.  Serve warm or at room temperature.
